Cold, snowy mornings call for warm coffee and a hot breakfast.  The fall and winter seasons give us a few reasons to stay in our pajamas a little longer and slow down with a delectable start to our day, be it sweet, spiced, or salty.

 

Sweet Starts

Fall spices such as cinnamon, ginger, nutmeg, cardamom, and all spice add a touch of warmth to any dish, but lend themselves especially well to sweet syrupy breakfast foods.  Add spices to pancakes, waffles, or French toast for an instant seasonal touch.  Fall fruits like cranberries, apples, oranges, and pomegranates all compliment fall spices as well. Add the fruits fresh and sweetened as a compote, or have applesauce as an alternative topping. Toasted nuts like pecans and walnuts add crunch and earthiness to sweet fall morning dishes.  For an instant fall upgrade, add pumpkin to morning favorites like pancakes or muffins.  Pumpkin’s comforting rich flavor can make it easy to confuse breakfast dishes with dessert!  Try using left over banana bread or pumpkin bread as a kicked-up version of French toast. Add a little whipped cream or caramel for an extra indulgence!

 Savory Beginnings

Few things are more satisfying then a hearty breakfast on a cold day.  For fall breakfasts doing something as simple as adding herbs like sage, rosemary, or thyme to roasted potatoes with a fried egg can give a dish a fall makeover.  Look to seasonal vegetables such as winter squash, sweet potatoes, and Brussels sprouts for inspiration.  Make an easy fall vegetable hash with maple bacon and, viola!: a delicious autumn breakfast. (You can also make a hash from leftover Thanksgiving stuffing!)  Bacon and sausage are breakfast favorites that compliment almost anything, and for other smoky flavored additions we like cheeses such as fontina or smoked Gouda.  These cheeses add robust flavor and a creaminess that matches well with fall flavors.  Add to omelets with dark winter greens, like kale or collards.

Warmth in a Cup

Every delicious fall breakfast deserves a toasty warm beverage.  Coffee, hot chocolate, or tea are all suitable morning pick-me-ups.  With just a few simple additions your morning drinks in your mug can make your plate jealous.  For coffee, try adding a dash of cinnamon and cream for a simple fall touch up.  Classics like Irish coffee and Kahlua and coffee pair well with cold weekends indoors.  Hot cocoa lovers can spike their mugs with the spicy and sweet Mexican hot chocolate or a fresh peppermint hot chocolate. For sophisticated tea drinkers, many of us cross over in the fall to the occasional perfectly spiced chai latte, but beyond this there are other options, like the earthy, yet bright rooibis which can come with many full flavored variations, such as apple or ginger.  (Rooibos is a member of the legume family grown in South Africa and is quickly gaining popularity as a tea.)  Many of the big-name tea companies have herbal teas flavored with fall spices and fruits. Try adding fresh slices of ginger, cranberries, oranges, a clove, cinnamon stick, or a dollop of honey to bring you even further into fall.
