Summer is easy breezy and our meals should be too. During the weekday morning rush out the door or a leisurely brunch al fresco at home, breakfast in the summer can go beyond fresh fruit and yogurt. A few ideas for your most important meal of the day in the summer…

No Stove Required

No, of course we don’t expect you to slave in the kitchen all night! There are many healthy breakfast options for those of us on the go that can be put together and refrigerated over-night for an easy summer breakfast. Chia pudding recipes use a few ingredients that many of us have on hand. Mix together, place in fridge over night, mix with fresh summer berries and viola, breakfast is done. For oatmeal lovers, try overnight oats. Protein lovers will love over-night breakfast quinoa or peanut butter balls. Layer any of these into a parfait with your favorite fruit for an extra indulgent feeling. For a crowd or summer brunch, try a no-bake fruit crisp, or no-bake breakfast cookies.

Feature Fruit

Summer is fresh. Smoothies, smoothie bowls, pressed juices, pancakes, muffins, and scones become summer instantly with seasonal fruit. Another way to incorporate fruit is in fruit “boats.” Simply fill a round summer fruit like cantaloupe, or papaya, with yogurt, chia pudding, or your over-night oats. Banana pops; yogurt banana splits, breakfast “pizza”, acai bowls, and baked pastries with fruit are colorful and brightly flavored additions to a morning meal.

Feed a Crowd

Summer breakfast and brunch gatherings should happen more often. Cool summer morning temperatures make the early half of the day the best time to gather outside with delicious summer foods. Highlight the season’s best with an heirloom tomato and ricotta tart, summer breakfast tacos, French toast with berries, savory toasts with summer radishes, burrata, and chives, herbed scones, baked vegetable strata, a make your-own bagels and lox, complete with summer micro greens and herbs, peach cobblers, or individual parfaits.

The saying goes ‘without cocktails, it is just breakfast’…a brunch party is not complete without cocktails! Our current seasonal favorites are sour cherry Bellinis, fresh tomato Bloody Marys, spiked sweet tea, and for coffee lovers, coffee granita. Make sure to have other non-alcoholic beverage options like lavender lemonade and creamy ice coffee.

Now the early part of the day just became more interesting!
